Hey all,
Here is my week in review via my instagram photos.  (Is anyone else sort of in love with instagram?? i actually woke up the other day and liked because i wasn’t 100% ready to get out of bed yet… just me?? Okay, i can accept that!)

I’ll start with my foodie successes!! I usually eat the SAME things every other day!  Habit?  Easier to track my food?  I’m boring?? All of the above?  It’s easy to eat the same things that you like when you’re single!  Probably the only perk of living single.  I can the same things, AND i can have breakfast any time i want!  I will have to find a man that likes breakfast for dinner!!

BUT, back to my successes.  I made both a fantastic gluten free/dairy free cauliflower crust!  🙂  I had a fouled attempt earlier this week… but the second try was WELL worth it!!!  The first round was delicious, but it just didn’t crust like it should have.  I tried to be sneaky and use Coconut Flour.  I have the WORST luck with coconut flour?  I’m starting to think that it dries out so quick because of altitude.  Well, second time around I used Caralyn at Gluten Free Happy Tummy’s recipe!  It was yummy!!! I really need to work on my presentation for photos… I loved it! I actually used half of it for dinner, and saved the other for lunch the next day.  The second day was actually pliable and I was able to use it as a wrap! Even better! Two recipes out of one!!

The second one I made was from Laura at Sprint2theTable.  I am now obsessed with recipe, plus a few others of hers!! It seems like I have a very similar palate to her.  I made her PB & Aggs recipe!!  It was delicious!! http://www.sprint2thetable.com/2012/08/pb-aggs-wiaw/ I think i also added 1/2 banana to it too, and then I put the mixture into a left over Peanut Butter container.  I LOVED it! and I wasn’t hungry for a while… even betteR! Protein does that for you!! The bread in the photo is the Julian Bakery Paleo Coconut bread.

I HIGHLY recommend anyone following a gfree diet follow these two gals!!  They both have a wonderful variety of documentation on their recipes and meals.  🙂
In regards to my fitness… I took a challenge via the gals at Tone it Up from Instagram yesterday!  They said “drop and give me a plank”, SO I DID! 🙂

The other big accomplishment in my “Allergy Fitness” life, was that I completed my Hybrid of Chalean Extreme and TurboFire.  I am going to miss my program until I come back to it.   I hadn’t done Extreme in a while, but wanted to a change from the heavy cardio.  This is a great hybrid, because it gives you a mix of both worlds.  You don’t get bored easily!!

I also took my “After” photos for the FIRST TIME EVER!  Does it ever get easy to pose in a bikini??  And then post the results??

very pleased with the results, but embarrassed… that’s my old insecurities rearing their ugly head…

I will have to do this on Friday’s from now on!  Considering almost all my photos go up on Instagram.  I could post for days of all of Fumble’s photos too! lol!

Hey all,

I hope you had a great weekend! I had a blast!! I got to go to visit with my besties from College. It’s very rare that we get to see each other, so it was a pleasant and MUCH needed treat!

It’s funny though, when you get older how things change. I used to leave a party with a purple or pink goodie bag with candy and bracelets, but NOW I get excited about leftovers! Check out the Guest of Honor, “Princess Jaclyn’s” 3Bean salad! I was the lucky recipient, and got to take it home with me! SCORE!! (Thank heaven’s I always carry a lunch box with me!) It’s a super easy recipe per Jacks, diced tomatoes, black beans, white beans and red beans, corn! Voila!!

I also was able to stop at one of my favorite places, a grocery store! But not just any grocery store, Whole Foods!! 🙂 I will not tell a lie… i dropped $70 in 15 minutes! But they were all necessity items! Plus, I got a pie for the party! AND I got my dad some healthy treats! I live with him, and am trying to instill the world of a healthy eating lifestyle.

PS, i’m quite glad that i got that many protein bars. Because I’m gluten and dairy free, I usually always have planned foods for meal time. Somehow I totally disregarded Sunday’s ride home and breakfasT! Doh!!! Ate the Maple Peanut Protein bar on the way home. DELicious!!! Can’t wait to try the others ones!

 

So… enough about me, back to my blog post! Are you an Iphone person? I traded my Blackberry in for an Iphone in December, and I’m pretty sure i’m a convert for life!! And I’ve become addicted to Apps. However, I find that the reviews are never sufficient, so I’ve become the girl who installs, tries and deleteS!

Who doesn’t need the weather? I can access where I live, as well as my sister’s home in CA. This girl requires some verbiage!

I am always editing photos of Fumble because he’s so dark! It’s hard to see his pretty little face through all the black! I like how I can edit, crop and add some effects to the photos!

This is how I took those jumping photos of myself! You can set the camera to take as many pictures as you want and as quickly as you want and walk away. It’s great if you want to catch a photo in motion! My only snafu is that you have to delete a lot of the photos afterwards. However, after all is said and done and you have an awesome “motion” photo! I’ll happily delete!

I like this app to make my collages for instagram. My only issue is that it doesn’t automatically transfer to Instagram. But I like how you can place the photos where you want and move them around. I’ll take customization over a preset collage.

MyFitnessPal (Free)

This is a great app to keep track of your caloric intake and foods! I will document what I eat to make sure I’m eating enough. However, I’ve tried to back off for a while, but I’ll keep the app around. I typically eat the same meals day by day, so it’s silly to add it up every day!

If you’re gluten free or have any food allergy, these are great. They locate where you are and tell you what restaurants around you offer a gluten free and allergy friendly menu. When I’m traveling these are GREAT! I used them my entire trip to Denver this past Spring. I think if I had to pay for them, I would! It’s THAT worth it for allergy friendly folks!

I also used this app when I was in Denver. I had a GPS that broke one day. I got a free 30 day membership with the voice commands. I am out of my trial, but still find myself using this app more often than not! I’m sure I’m breaking all sort of rules of driving and reading my phone, but it definitely beats having to print directions EVERy time i need them (which is usually a lot because I get lost in a closet!)

Are words even needed to Pinterest? I could sit on here ALL day long!! It makes for a great mini break during the day! Plus, it’s where I usually keep all of my recipes, so when I’m in the kitchen it makes for easy access to the recipes!

I USE THIS EVERY DAY!!! You can look up your foods, and then they’re all there! It’s also great because you can make a list of your favorites and then on Saturday when you make your grocery list it’s easy to put it together! I rarely ever forget my grocery foods! (rarely, sometimes i still forget!)

Well, leave it to me! I start a blog and then I go MIA!?!!

Things got a little busy around here… I went to Cape Cod for a quick trip to visit my grandma, my old coworkers and a one of my besties!  When I got home, and back to work it was crazy busy! Then my dad got a horrible virus and we spent most of the day yesterday in the ER.  It would have been an ideal blog time! But no servicE!

I figured because I’m so new to this, I should share a few of my favorite things! Both food and life included!

Workout:

TurboFire is my workout of choice.  I’m a cardio junkie!

I also love myself some

My body thrives off of muscle, so I love to lift!

My favorite flower:

I am obsessed with blue hydrangeas.  I found these beauties in Falmouth, MA last weekend. Stunning!!!

Time of Day:

Sunrise!!  This was taken on the Cape at the beach.  It’s one of the most peaceful and spiritual moments of the day.  There is just something about sunrise that allows you to take a true deep breath.

Kitchen tool:

I use my TopChips ALL the time!! I use a mandolin to slice up fruits and veggies, put them on the silicon tray and microwave.  PLEASE be careful of the slicing! I’ve taken off the tip of my thumb three times!  Safety first!

It takes a few tries to figure out how long you need to put the tray in the microwave to get the “right” crisp on your chips.  But once you get it, you’re obsessed.  I eat a sweet potato a day via Topchips!

Meal:

Eggs and breakfast!!  I could eat eggs all day long.  Breakfast as a whole has my <3.  Eggs, pancakes, waffles, turkey bacon…

Gluten free and Vegan pasta alternative:

I had these in Santa Monica, CA at a vegan restaurant two years ago.  I was in love at first bite! I’ve never been a fan of the gfree pastas out there.  So when I found these, I was not only astounded by how crunchy they were, but also how easy it was to make them.  You can add whatever you want for flavor.  Plus, and this is a MAJOR one, the calorie count is MUCH lower than real pasta!!! score!!

Peanut Flour:

I have a tie between these two!  Pb2 was my first encounter with peanut flour.  I loved the taste and consistency of it.  Recently, I purchased the Protein Plus variety because of the cost difference.  Money is always an issue for me, so I will probably stay with the Protein Plus.  It doesn’t have added sugar or salt, so it’s just peanut flour.  I do miss my Pb2 though!  If I can ever buy it local, I’m sure I’ll buy some!  I order mine through Netrition right now.

If I could get paid to “pin” I would love it!! I signed up for Pinterest before it became as big as it is today.  I was so happy I wasn’t wait listed!  I love being able to follow others and get ideas about everything from fitness, motivation, to crafts and decor!  And of course outfit ideas! Every time I “Pin” an outfit, I feel the need to shop.  TROUBLE!!

I very rarely buy anything full price!  I’m always looking for a deal.  Except for pants.  I have to buy those at full price.  I guess it’s the cost for being 5 foot 1!  I shop for almost everything at Marshalls, including FOOD!

I’m sure i’m missing a bunch of things, but this is a good start! 🙂

I got my first shipment of Shakeology® Vegan Chocolate today!! Yah!!

I have tried my FAIR SHARE of protein powders.  I had finally settled on the natural flavor of the Sunwarrior, which I do like, but cannot drink on it’s own.  I’ve created a bunch of recipes to jazz it up a bit, ie pancakes, waffles, bars…  But, alone, it always seemed a little chalky.

Being involved with Beachbody programs for almost 7 years, I have wanted to try Shakeology®for a LONG time!  It always seemed just too expensive, and being dairy free, it would be too difficult for me with the Whey.  HoweVER, they did it! They have created two vegan flavorS!  Score 1!! And they are gluten free! Score 2!!!


I did my little number punching and figured out, with my Coach discount, this would equal out to a little more than $4 a day! That’s the cost of a coffee, which I was spending money on everyday anyways!  Shakeology® has WAY more to offer me than a cup of black coffee!
I eat mostly vegetarian based meals, which are gluten and dairy free, so I’m always struggling to make sure that my body is getting enough vitamins, nutrients, and minerals.  And,  being single and buying for one, I always buy fresh veggies and never finish them before they go bad.  What a waste of $$$$.  In the trashcan.  Now, I’m even more nervous with all these weather patterns.  Fresh food is going to get even more expensive.  I work for a non profit and shop in the perimeter aisles of the grocery store, the two don’t match up well now… What’s going to happen if prices go up!

So… what did I have to lose to try it out! At this point, not much.  So I bought it… and guess what???

I LOVE IT!!!!  I have had two shakes so far, and I am actually sad when they’re over!  You can make these into whatever your heart desires.  Mix them up like you would any other shake.  I will try to post some recipes as I get more creative.

If you haven’t heard of this before, and are asking what is it? Or why is it different than anything else I’m already drinking, here is the answer!

I was also able to create some lovely little vegan gluten free Shakeology protein muffins! They average out about 50 calories each.  Moist on the inside, and a lovely flavor.  I added some peanut flour to the recipe, because how can you go wrong with PB and chocolate!  I’ve heard that there are many more recipes you can make! My next job is to make Chalene Johnson’s Shakeology barS!! CANNOT wait for those!

I am an avid follower of MANY blogs (I get over 150 emails a day).  I know that sounds crazy, but I do love to read about other people’s success stories.  I think a lot of it has to do with my yearning to do the same thing, but fear of getting started. BUT, here i am!! Ready to start.  Taking the leap!

So here’s my first recipe of something i LOVE TO MAKE AND EAT!

Does anyone else love breakfast for dinner??  I have a tiny little addiction to egg whites, because they’re such a great source of protein.  I also love, LOVE, LOOOVVEE anything related to pancakes, waffles… you name it!  Favorite meal of the day!!

I make this thing called a protein puff.  Have you ever had a Dutch Baby?  Or is that just a Pennsylvania thing?  Well basically, a dutch baby is a pancake that fluffs up like a souffle in the oven, but is one large pancake.  It’s yummy, but SUPER high in calories.  My **TwIN** and I used to make them, years ago, when we lived together on Cape Cod.  We got a recipe that was lower calories and ‘better for you’.  We would make the basic pancake and jazz it up as much as we could with other healthy toppings, ie apples, bananas, strawberries.  We tried to be as seasonal as possible!

Since going gluten and dairy free, I have struggled to find the right combo of flours and mixtures that will bake properly, stay fluffed and taste good.  I try to stay away from carbs in the evenings, so I also struggled with the flours.  I’ve used everything from garbanzo bean flour, coconut flour, almond flour… all too dry.  It took me a while, but I was reading another blog.. I think it was Purely Twins (I hope i can put them in here, i haven’t gotten as far as how to reference others in a blog.. sorry if i took a mistep).  I love their blog because not only are they twins, duh!? but they’re also healthy fitness lovers who eat gluten and dairy free!  When I read their blog, I feel like I could be their triplet!  They posted a recipe for a protein pancake, and I figured if I tweaked it a little, I bet I could fluff up my dutch baby to work!

Gluten Free HIGH PROTEIN Dutch Baby

1/4 C Egg whites

1/4 C water (or almond milk)

1 Scoop Protein Powder (I use Raw Vegan Sunwarrior Blend)

1 T peanut flour

dash of salt

seasoning as you like… i use pumpkin pie spice, you could add 1 T of cocoa powder… jazz it up as you like!

1 egg white beat until peaks form

Extra virgin olive oil spray

Preheat oven to 400 degrees.

I mix everything, except for the egg white in to a bowl.  In a separate bowl, I beat the egg white until soft peaks form.

In a small frying pan, I spray a little EVOO into the pan and then place it into the oven for approx 2 minutes.

I slowly fold in the whites into the protein bowl mixture.  Be careful not to break the fluffy whites!

Once incorporated, take your pan out of the over (use a mitt!!) and spray again with a little EVOO.  Slowly place the mixture into the pan and then flatten it out a little.

Place into the 400 degree oven and bake for approx 20-23 minutes.

When it comes out it will be a little fluffed up, let it cool for 3 minutes.  And there you have a protein puff pancake!  I put a little spray butter on mine and top it with either more PB or put  a banana, apple slices, dip it cranberries… you name it! The nice thing is that this is a blank canvas for you to jazz up depending on how you like flavors!
I also will sometimes make it in a muffin pan and split it into 2 servings and save one for a snack the next day!

PS, did you get your workout in today??? I DID!! I was wide awake at 4:10 am for NO APPARENT REASON.  So, rather than stare at the ceiling, I went down and got my Chalean Extreme Get Lean Intervals done! 43 Minute work=CHECK!!! 🙂
